I'm going to be starting a new play through of Divinity Original Sin EE.

The last time I played the game was before the enhanced edition was released and I never made it past Cyseal because of the difficulty. I was playing on Classic.

I'm not sure what would be a good class pairing to make the game easier.

Right now I'm thinking one of three pairings. Battle Mage and Knight, Cleric and Ranger, or Knight and Cleric.

I'm open to other pairing but those are the ones that look good to me.

Well me and a friend finished the game co-op. He started the game with scoundrel(not very useful.. at least he wasnt) while I was focusing on my mage with Fire(dmg) and Hydro(heal).

In Cyseal we picked Madora and Bairdotr that ended up doing the heavy lifting when comes to damage dealing.

Now if you want you can check what companions you want to pick before hand and then make your character( I personally was considering to make duo mages if I ever felt like replaying DOS EE).

I think you should be fine if you manage to make a good mix of elemental and physical damage as long as you dont try to make "Jack-of-all-trades" class(so focus on 2 schools of skills with 1 weapon)

Now if you still find it difficulty just tone the difficulty down and enjoy the ride. Video Games Gods wont smite you for playing on Easy you know :P.

Alternetely, you could build one as a ranger and use the mage in the pub as the second mage. I agree that scoundrel classes are fairly useless. A player witch is another that could be used with the pub mage and a ranger. Madora makes for a good in your face delayer so the others can do heavy damage.
Air + Fire and Earth + Water mage, each with dual wands. They complement each other perfectly. Pick up Bairdotr, and you can basically have endless stun at the beginning, if luck permits. Madora and Bair can each do amazing single-target damage late game, while the mages can pelt large groups with those new high end spells. Admittedly, the mages will end up using the wands a lot later on, though they do well enough and offer a bit of cc here and there. Can save up AP or work around cooldowns as well, just shooting the air wand, etc, at appropriate puddles/surfaces.

I opted for a Ranger and Cleric pairing.

I gave my ranger some Geomancy skill and plan to give my cleric some offensive capability.

I can't take credit for build because I copied a good chunk of it from a lets play I watched.
