Seems like you can run out of Recruitment during the RTS battles.

Is there a way to know how much will be available to you before invading/defending territories?

Yes; on the map when you mouse over the country, the population will be shown on the far right slot in the bottom UI bar (the amount of support is shown on the far left). The default population is also shown on the map itself (with the houses symbol), though that can be modified with cards, etc.
