I'm interested in Divinity: Original Sin to play home in co-op. I wanted to know if you need to buy 2 copies of the game to play in co-op over LAN? If yes... how do I buy 2 copies of the same game on GoG?

Yes. You can buy a second copy as a gift, but I think it would have to be a separate order.

I have not read the release topic yet, but it doesn't look like GOG will have a Collector's Edition type package (2 copies of the game and 1 DLC).

I don't think so, as long as they are your PCs and you're not installing it on somebody's else machine.. As for the second question, as I see it, you must have a second account as each copy is tied to a different --> unique account. If you want to buy D:OS a second time, it must be as a gift.

Hope I'm not mistaken for the above information.

Since they're DRM-free you don't actually need to purchase two copies to Coop. Even for the Steam version that's the case I think since it doesn't require Steam. So installing the one copy on both computers will allow you to coop the game.

Perks of having it DRM-free I guess if you're fine with having 2 people play one bought game.

Strictly speaking GOG only wants this to happen within a single household I think.
In the EULA.txt is nothing mentioned about the amount of installation to machines owned by yourself. You are just not allowed to transfer the licence to someone else, like selling the game (starting your own GOG website and distribute it further :D).
Grey area. Sure you can own two computers standing next to each other, but when you start a coop session you don't duplicate and play against yourself, do you? But the beauty of DRM-free means Larian trusts YOU to do whatever is right, which in this case, IMHO, is, if you like the game and actually use it, that your partner is logging in to GOG with his own account and buys it too.

Yeah, no. Install on as many of your machines as you like. Play on as many machines as you like. Still doesn't let two people simultaneously play the game at the same time. That requires two separate licenses.
