I see and pick up amber alot in this game and have yet to find a use (if, indeed, there is a use). Would someone care to share? Thank you...

It can be used to enchant weapons with Life Leech. Or you can sell it.

In Divine Divinity there is no use for amber, etc, except to sell or trade with. If I had more loot than merchants had gold, I tried to sell off the heaviest stuff first. Gems are light weight, so you can carry around a decent amount in case a merchant has a high value item you want, but don't want to go back to you base to collect loot to trade with (there are also two NPCs in the game that you only get the one opportunity to trade with).
A couple people have spread gems around their home base for a little bit of lighting at night.
