I've gathered a fair number of these purple potions, and figured out how to make them myself, but I haven't figured out what they DO. At first, I believed that they would cure the "poisoned" status, but that doesn't appear to be the case, and even if it was it wouldn't explain why there are different sizes of elixer. So, what exactly are these for, besides vendor trash?

I think they temporarily increase your resistances (fire, poison, spirit, lightning)
Edit: Yep, just used one and that's it. Open the statistics window and have one while keeping an eye on your resistances values

Elixir gives 10%/15%/20% resistance to fire, electricity and poison depending on the potion size. It can take you above 100% which temporarily makes you immune (till you drop under 100% again). If you are going into an area with lots of magical traps, drinking some elixir beforehand will help with the damage you take from traps utilizing fire, electricity or poison . . .=)

Alright, that's cool. If you drink multiple potions, do the bonuses stack? Could I theoretically drink 5-10 of the same-size potions to give myself immunity? And how long does the effect last? Also (I don't expect an answer to this one), why doesn't the manual mention this, ever?
Bonus from elixirs do stack, so yeah, i guess that using enough elixirs will get you immunity for as long as the effect lasts.
I don't know how long the effect lasts. Drink one elixir, keep the stats window up and keep playing the game while keeping an eye on the stats window. When the ressistance values drop on the stats window, well, you should have a fairly good idea on how long the effects of the elixirs last at that point.
I guess they thought it would be fairly easy to figure out what elixirs do, probably that's why it's not mentioned in the manual.
On div div, having the statistics window open while using potions or trying out new armor and weapons it's the best way to understand how they impact on your stats.
