This game will be my first purchase through GOG and since I only used Steam up until this point I'm wondering how the updates are going to be handled in GOG. Will we have to redownload the installer in order to update or will there be patch installer? Or will it be like Steam?

Yes.
If you use the Galaxy client, updates will be automatic (unless you switch to manual). There are downloadable patches made for updates, and the full installer is often updated, as well.
