Is there way for GOG Galaxy simply to launch

Divinity Original Sin 2\DefEd\bin\EoCApp.exe

and not Larian Uplay instead?

Yup, just figured it out!

Go into the Galaxy page for the game, and select "Manage Installation" from the button on the top right that looks like a bunch of sliders. Select "configure."


Check "custom executables" and on the bottom click the button to as an executable.

Put the address to directly launch the game.

Click the "Default executable" button under your new entry.

Now when you use the Galaxy shortcut to launch the game, the launcher is skipped.

Interesting. Works for Baldur's Gate 3 too, though you get a cloud sync error message when you exit the game

Actually, you can avoid that too... in the same Configure dialog as the previous fix, just un-check
'Sync local saves with GOG Galaxy Cloud' ...

I'm starting the game directly from the executable, and I'm not having any issues at all...

Unfortunately that disables all the Galaxy in-game features.
