If you have one or more mods installed and save the game, but then remove those mods, will the save load (obviously without whatever benefit the mod gave you) or will the save game become broken and unable to load?

My wife and I are about to play this co-op and there are a few mods she's been looking at, but we don't want our game to become unusable if we lack those mods for whatever reason.

In general, it works fine. The reason it cannot be completely guaranteed, is because e.g. a mod could change that you can only get off the initial beds if you correctly answer a riddle. If you save in that hypothetical riddle dialog, then remove this mod, and reload the savegame, the dialog will be gone, but the code to get the players off the bed won't be triggered again (it only triggers the first time the tutorial level gets loaded). So you would be stuck on the beds and be unable to continue.

There are, however, very few mods like that (if any). Especially if you stick to mods like increasing your running speed, extra crafting recipes, purely cosmetic changes, or extra classes, you are extremely unlikely to run into any problems.
