I'm just wondering how the GoG version treats coop. Is the coop limited to people using GoG or all PC players (meaning those on Steam as well)?

GOG / Steam / App Store players can play co-op using Direct Connection (with a 'Server ID' or IP address) or LAN. If you use Discord, that may also be an option.
