In which order should I play each race's saga for the story to make sense? Or does it not matter?

For the most part, missions from diferent factions are happening almost simoultaneously. However, I would suggest Empire->Clans->Undead->Legion; the actions of one campaign have effects on the experience of the other factions, and I think the Empire one, because of its wide scale, is the one which best shows the scope of what's going on allowing thus to better set the action of the other stories. Dwarves are rather misterious while playing with humans, so it's interesting to see their angle; same goes for the Undead, which suprisingly are pushed by the bloodlust of a vengeful widow in a quest for vengeance which fills some gaps in the previous campaigns -Legion are the meanest evil guys, so it makes sense to leave them for the end, the other side of the action.

Thank you for the in depth reply! That's probably how I'll play it then.
As Oook says, the four campaigns happen more or less simultaneously. There's slight differences between them (for example, the Undead Hordes campaign finishes roughly around the time that the 3rd Mountain Clans mission is starting, because that's when High King Sturmir dies), but for the most part they all happen around the same time and are all considered to be part of the canonical ending.

It gets a bit messier in Disciples 2 because there are certain events in that game that contradict each other.
I definitely think the developers meant for the Empire saga to go first at the very least, since the first mission of it plays more like an introduction to the game while the other sagas start off a bit harder.
