I would like to know if there is a way to loot what Diablo drop since after defeating him the final cutscene starts and it sends me back to the main menu. There are some enemies, too, that I can't kill to earn the xp.

I'm playing on Nightmare with my Knight

Diablo drops at most one item, which may or may not be of much value. As a non-boss monster, Diablo is not required to drop anything. When he does drop an item, it may be gold or non-magical. Anyone on dungeon level 16 when Diablo dies will be forced out of the game. Anyone not on dungeon level 16 will remain in the game, and can freely enter dungeon level 16 after Diablo is dead. Such players will not be kicked from the game. Additionally, anyone who was kicked can rejoin the game as a guest of someone who was not kicked.

None of this helps in single player.

All of this applies to retail Diablo, as sold by GOG. If you are playing a mod or a source port, the rules may be different.

Saving while diablo is dying and then reloading should allow you to move in single player.
