When I launch the game I get the enter pilot name screen and I am unable to type anything in at all. Please help!

Are you using dosbox or trying to run the game directly? You should use dosbox.
A better option is what CDN Merlin suggested. Use dxx-rebirth. Dxx-rebirth is a source port of Descent. It's a new game engine. You put the files for Dxx-Rebirth in your descent directory and then run dxx-rebirth. It lets you play descent exactly the same, but it has better support for modern computers. He provided the link where you can download it.
