I cannot see any particular effect that the saint day has on invoking a saint.

Some of the online help mentions Raymond Lull being good for alchemy on his day - but not why.

Couldn't find any other mentions.

The base % chance of success calling the saint is supposed to be higher, but it isn't.

A saint has a base percent chance for a prayer to succeed and a base amount of DF the monk needs to spend. Extra DF gives extra % ... 1:1

Far as I can tell the saint day doesn't help! Nor does having the saint's relic!!

I think the prayer has a higher % of working because its base cost on the saints particular day is halved. really just a novilty. 1 out of 365 days I have tried to time prayers to saints who increase weapon or armor quality but you need to just sit in town for days on end to accomplish anything.
I have played around with it as well with a 99 virtue and i can't see any affect, other than success rate. This makes me a bit sad...
Page 71 of the cluebook claims you get a partial DF refund when praying on the Saint's day
It doesn't help on the effect, but it does help that the closer to the date of the Saint you are, the less skill in Relgion you require for it to be successful and also the less DF you need to spend to reach 100%.

Religion has no effect on success rate but having higher Virtue than the minimum required will.

Religion helps you regain DF faster and is useful in several encounters.
