Howdy, I'm new to DOS games and was wondering how I would go about using Darklands' Roland MT-32 midi tracks instead of whatever is default? I'm not sure if this is possible in-game, through DOS box, or externally elsewhere. Like I said, I'm new to this so some guidance would be appreciated.

You can follow the instructions from here to set up MUNT with dosbox. (The instruction is for Wing Commander but the same approach works for any other mt32-compatible game). Remember to change the hardware settings for Darklands after configuring mt32 in dosbox. This is done by running INSTALL.EXE from the game installation inside dosbox.

Hey hey hey! Got it working, thank you so much! I was looking round the extras and fell in love with the MT32 camping theme. Glad I can actually hear it while playing.
