I think this is probably just a problem with the way the documents were created...OCR'd, I think? Anyway, I am unable to do a "find" in the manual, clue book, etc., which is quite frustrating.

Does anyone know where txt (NOT pdf) versions of the game documentation are available or have any other useful suggestions?

I found that if I opened the manual in Adobe Acrobat Professional and used the Document==>OCR Text Recognition function in that application, the resulting PDF was then searchable. Could GOG.com themselves do the same? Or I'd be happy to pass on my copy to them if there is no copyright problem.
