There seem to be a couple of little things like this missing from the tutorial section. (I need to spend some time looking through the controls).
It's in the tutorial. The same pane that tells you how to use ALT to draw your weapon also tells you to double tap it to put them away. I didn't read through to the end for my Corpo but noticed it on my Streetkid.

For people using controller on PC it's double tap " Y " Button to holster.

the question is why isn't it holding the reload button like in every other game.

Check the game's Journal/Database. Got all the gameplay tutorial stuff in there plus several I didn't see in them like the very handy slide from a full run etc.

Haha, took me around 7-8 hours before I found out where the datashards go...

It's such a strange design choice not to put the fixed keybindings into the keybinding-settings, where people naturally will look them up. Just grey them out.

Agree, I really struggle with user interface choices coming from developer who got it so right (IMHO) with Witcher 3. Everything there was just right - I did not have to look for things once - it was all just intuitive within the first 3 minutes of the game.
There's too much double tapping in this game. It smells like... console.

You can also hold down 'Alt' to bring up the weapon wheel, which has a holster option on the right side.
