Pretty much every quest I have now tells me to hurry the eff up. I have Takamori/Takamura/TakoTako waiting for me at Sunset, The fat guy wants to have a firearm tournament, the guy that is probably going to suicide if I don't talk to him in time, and other stuff.

Which ones can I put on pause while doing my other stuff? Or aren't they time sensitive?

Tough to say what the game actually tracks with a time limit. Hard to say if some missions don't simply glitch out without any time system involved. I could still do the firearm tournament quest after finishing the main story. This much I will say.
I did not complete the whole story (no specifics b/c of spoilers: so far I spoke with somebody in cyberspace, uploaded something on some base and spoke to the guy from the transport) so not sure it is going to be the whole game but I get the impression that the timelimits in the game are similar to the original Mass Effect: colony Ferros is under attack, you land there kill few geth in the docks, see colonists trying to hold against one geth, you say "Eh, they'll do good without me...", take off from the planet, go through numerous uncharted planets and quests, save Liara, have a chat with Rachni Queen on Noveria and chat with Sovereign on Virmire, then come back to Ferros to find same colonists fighting same geth. So basically if you need to complete 3 missions during the sunset go onto the one that sounds appealing to you on the 1st sunset, complete the mission, go to the 2nd mission location, in a true Witcher spirit click on the "Skip time" (they really needed to put it as "Meditate" :P ) till sunset, complete it, then same with 3rd one.
What Doom3r said. While I'm not that far in, the 'timelimit' seems to act just as a 'this mission is available during this time', while it's always nice to have something that is time sensative like the hostages in Human Revolution(took me by surprise), they seem to have little impact if they have any at all.

None are time sensitive. In fact you can even start one then wander off and do something else, then come back and finish it when you want - just expect to receive some snark about it.

Actually, some events are missable. Or too glitched.


SPOILER:

I was looking for the burial in the nomad camp. The game informed me that there would be one to participate in after a certain NPC's death but I progressed with the questline and the nomads moved camp and the game pretended I had attended the funeral but never actually did.
