Is it possible to have 1.63 installed and download the 2.0 offline installers to install the game on a different folder and have both games playable without affecting each other?

Not with the galaxy client. I don't care about the client.

I got 2 Skyrims installed on this current machine, might work the same if they are in different directories?

Have both versions of the game in different directories. Made a copy of the save games beforehand though.

I never checked, do they save the save files in some same folder under My Documents etc or in their own directories in the installation folder?

Saves are under Saved Games.

C:\Users\[USER]\Saved Games\CD Projekt Red
Works fine, your problem is the saves, you have to manually switch between the saves.

You cannot use the same save between both versions, on 1.63 the save won't load, on 2.00 the game will be extremely buggy.
