Can we play with the viewers in Steam with this version or only with Steam version?

I gifted a GOG copy to a streamer and the Twitch integration does not appear to be functioning. She tried basically everything possible, including reinstalling the whole game, to try to get it to work.

So I'm going to go out on a limb and say Twitch integration is not part of and can never be expected to work for the GOG version.
