Do I have to do anything specific to play this after buying, downloading and installing or does it just boot up and play similar to how Steam runs? I've had DOSbox in the past, and wasn't able to get Crusader working with it correctly. I didn't want to download this, and have to goof with and tweek DOSbox just to get it to work. That's really the only issue stopping me from buying this. Any input would be helpful, thank you.

No configuration should be needed.
The game worked perfectly on Windows 7 64-bit.

Yep, GOG pre-configures their games to work on a majority of systems. Crusader will run just fine.

I would say that you have a 90% chance of it working perfectly the first time, and a 10% chance to need to run a very simple "graphic mode setup" program first, after which it will work perfectly.

GOG provides this program themselves and it's as simple as just picking a different option, usually the relevant choices are "surface", "direct3d" and "opengl".

You should be good to go after buying the game, I haven't had to make tweaks to any of the games I've purchased. Buy and Enjoy!
