How do I get them off me? Can't shoot 'em off. Tried jumping up and down.

Those hands are a one-hit kill, basically. Cry, even in god mode, you cannot shake them off.
I don't think this is how it is if you play it on an original computer or something -> I think it was intended to be possible to get them off by spamming the Use button, but I know with DosBox, you have a -small- window of opportunity when they start grabbing you, but if the screen got dark, forget it, I tried auto fire scripts that spam the button 50 times a second and it didn't work.
Its one of the few annoyances that really, well, annoys me in this game. You just have to avoid them completely. Luckily they are not hard to deal with once you know where they are, and if you don't, well, whenever you hear their very distinct "I'll swallow your soul" sound, start running. Fast.

You must be hitting the wrong button or something. I get the hands off everytime, UNLESS i'm playing on the hardest difficulty, sometimes they damage me too fast before i can get them off.

In my personal experience, you can shake them off, however, only if they grab on to you for a couple seconds. After those few seconds, I believe damn near impossible, if at all to shake them off.
