Wrote a message to SNEG just a minute ago.

I told them about the launch problem since the latest update, the missing HD textures in the PC version (can't confirm but read about this being a thing) and also asked for a texture toggle option just like in Shadow Man Remastered so that you can use either the default ones or the new ones (personal preference).

When I receive an answer I'll post it here.
This is the message I received from support:

"We're sorry you ran into this issue - we're working on a solution right now. In the meantime, you can use the beta channels feature in GOG Galaxy and play Blade on a rollback channel a pre-update version of the game."
As expected, again pointing at Galaxy as the solution.
And completely disregarding and basically giving a finger to everyone who exclusively uses offline installers.
Just wrote them a message too.

I am working as a software dev and WHEN something goes horribly wrong after an update of the production environment, we instantly do a rollback. We don't tell our customers "yeah use the test server in the meantime, let your users figure out a way to switch to the test environment, too. Good luck" ...

Shouldn't be that hard to switch the rollback-channel with the release-branch in GOG imho ...

would be cool if gog had a set time amount of selectable offline installer versions of every update.
