This is probably a stupid question, but: I bought Blackguards a while ago in the Humble bundle store--their own DRM-free version, it did not come with a GOG code. If I was to buy the Untold Legends DLC on GOG, would it still be possible to apply it to the Humble Bundle version of the game?

Well, even if it was compatible, you're not able to buy a DLC if you do not have a base game on GOG:
"Please note that you are required to own Blackguards Special Edition on GOG.com to be able to purchase and play DLC: Blackguards: Untold Legends"

Don't worry, no stupid question at all. The DLC comes with a specific GOG installer which looks for the GOG version of the game, so I doubt it would work with the Humble Bundle version (see screenshot).
Further, it's doesn't work because you simply cannot buy the DLC unless you own the base game on GOG. Although you're still able to buy a GOG gift code for the DLC, only somebody owning the base game is able to redeem it and download the DLC's installer. Sorry.
