They first move everything out of the house making the people homeless, and remove all their goods. Next they take the house down, and then they rebuild the house in stone.

Takes too long, I did it once and won't do it again.

The advantage with stone houses is that they use much less firewood (think it's only 50%), but the disadvantage is obviously the high cost (and IMO, worse look). If you do want to upgrade, especially many at once, it's good to have a boarding house or two already set up, so the inhabitants will move in there while the old house is emptied, torn down and rebuilt.

Another advantage to the upgrade process is that you can split up families, which can be good if you are a little short on houses. From what I can gather, if you have many families in a boarding house (or without a house), a younger couple will move into the new house, and therefore start procreating. Before, they could have still lived with their parents, and therefore not be able to have kids. When I mass-upgraded my wood houses over several years in my 400+ population village, this meant a boom in new children, which was quite a nice thing to see.

Make sure you have the resources, though, because it's quite intensive in stone and iron. Woodhouses cost 24 resources combined, while stone houses cost 74, so it's not a small difference. Unless you're struggling to keep up with firewood supply, it's probably not worth it.
You don't *actually* need to upgrade to do that though.

Just "upgrade" and then once they've gone elsewhere, cancel the upgrade. Often you'll get a larger family move in (I use it to shift families with children to school districts to reduce time spent in schools).

It isn't always successful, but I generally manage to get a few couples or young singles (who can still breed) rather than old singles/couples.

Only got as far as a 200-ish village so far. About 50% uneducated (mostly nomad imports).
The easy way is to build them stone in the first place, that being said build the boarding house or build extra homes. They will move into those until their new house is built, If you want to upgrade a house to stone there is a small icon on each houses information window. You bring that up by clicking on the house and the icon looks like a little stone house. That will start the process, you will notice that the old house must be torn down first and then rebuilt. It will take some time so plan ahead. If you have a map with a lot of stone you can harvest that and build them from stone in the first place. This will also save you wood in the long run because the stone house need less resources to heat.
Have fun. Also there are a TON of mods available that make the game even more fun.
