GOG will be switching to 'Definitive Editions' on April 29th, which will package both the originals and EEs together.

However, I was wondering if the soundtracks will be included in the 'Definitive Edition.' The soundtracks are currently under 'Included Goodies' for the original versions of both BGI & BGII, but not the 'Enhanced Editions.'

Once these are packaged together in the 'Definitive Edition,' will the soundtracks still be included, or will they be dropped?

I believe only GoG can answer that but I do remember reading that this will only affect future purchases and that if you have already purchased the old ones they will remain in your library including all the goodies.

Would be interesting to know nevertheless
I contacted support so I can give a clear answer. All goodies of the classic versions will be included in the Definitive edition. Furthermore, Enhanced versions you bought will turn to definitive editions which basically will give you classic versions for free.
