So I've got Baulder's Gate but one issue I've always had with older games is the UI. I don't know why but I just always have had issues with it, not just this game but any game!

so does the Enhanced Edition fix the UI or change the UI? It looks really interesting and I really want the Enhanced Edition but I'm also curious about this little aspect.

It doesn't fix it -- there's nothing to fix -- but it does change it, in many aspects for the worse -- readability and clarity (for an 'enhanced' edition) right at the top.

In terms of functionality - e.g. how do you swap items between characters etc - it's the same. You can make it take up less space than it used to, though, which is nice. Just turn off UI scaling. You can even totally toggle it off with Y and U for the left and right panels respectively. Not sure if that was an option before but either way it's a nice function.

There is one new thing which is very nice, though. Not the general UI but there's a new way to loot enemies. Before you had to click specifically on the little loot sprite that was over their body. It could be fiddly, particularly if they'd just dropped a small item as opposed to a piece of armour. It was also a bit tedious if there was a bunch of dead enemies. Now you press this little red diamond and a new panel comes up. Every dropped item in a certain radius around the currently selected character is in this panel. Click on it and your character will walk to it and pick it up. In other words, you have a catch-all "what's on the ground" panel rather than going pixel hunting after every battle.

I should also mention there's an in-game menu for changing between various text sizes, as well. I believe with the non-EE you have one size only, but I could be wrong. Using the high resolution patch, you choose particular font size for it to be set to, I remember that much at least. Now you can adjust it as you like, when you like.

The former exists in the original game too. I don't use those, but what doesn't exist, which would be useful at times, is to be able to remove only the bottom bar, or at least the text bar. H hides everything btw (I think it was H).

There are different font sizes in the original too (for different 'types' of text), but you need to change the actual files to alter the size, not via options or however this is done in the bugged edition. I've only changed one of the files, and it suits me well for 1600x900 resolution.

As fore the OP, it's kind of difficult to answer whether it's better in the new game when you don't write what you dislike about the UI in the original games ;)
