Hi! I'm on the fence about getting Baldur's Gate EE, but for running it on Linux. Apparently the remaster has improved much since launch and so I would like to know if the devs have kept Linux up to date.

So is it up to date, on par with the Windows one? And when was the latest Linux version released?
Currently, GOG offers me a 2.7GB shell script named baldur_s_gate_enhanced_edition_en_2_5_23121 for the Linux install of Baldur's Gate 1: Enhanced Edition. It is marked 2.5 with no units in the download listing, which I assume means it is game version 2.5. The changelog seems to agree with this. The most recent changelog entry reads:
