Potions of Mirrored Eyes (You can buy a few of them in Ulgoth's Beard) and "Protection from Petrification" protect from the gaze.
There are potions which grant magic resistance or let your party members succeed with all saving throws, potions or spells which improve saving throws won't hurt either.
If you pause the game and attack early enough you should be able to interrupt enemy spellcasters.
