The first time I fought the Demon Knight he used his mirror in the battle. I fought him again but this time he said he "won't waste his trinket on me". Why was this time different?

Improved Artificial Intelligence?

He doesn't use it by default -- you may have been using a mod. In the conversation leading to battle he tells you it's cracked and malfunctioning, and if you smash it he grows angry because he fears it.
