I've used the F/T multi-class and took ** in both Long Bow and Quarterstaff. The Long Bow choice seems obvious, but the Quarterstaff maybe not as much.
I like Quarterstaff as not only does crushing damage seem to meet the least resistance throughout the game (foes need to wear plate to resist it better), but you can also backstab with it. Oh, and you can get a +3 Quarterstaff very early on (and easily), which helps you survive at low levels.
Then, once you gain levels, add ** in Two-Handed style for better critical hit rolls.
Lastly, if you import your PC into BG2, you can upgrade to the +4 Staff of Rhynn quite early, and then by ToB end up backstabbing with the Staff of The Ram (a +6 weapon), which is pretty awesome. I am a huge fan of backstabbing as part of my battle strategy.
