is it possible to play the gog version of BG3 on the Deck? and if so how painful is the process

Yes, it's possible. You can install it via Heroic or if you have Galaxy installed you can install it via Galaxy (for time tracking and achievements). I've had zero problems running it on Proton GE 8.02.
