According the site, the next update will be incompatible with your current saves. The site also says "Larian is introducing a secondary branch of the game that will maintain Baldur's Gate 3 as it is". The site has instructions for this on Steam, but doesn't mention GoG. I tried searching for a GoG alternative, but I can't find anything. They say the story itself is changing.

Edit: the second I click "post", I find the instructions:

GOG:

-Select the game from the owned games section
-Click the settings button top right and select manage installation > configure
-To disable auto-updates, there is a checkbox “automatically update to new version” > uncheck this box to stay on the current patch
-Unchecking this box will let you roll back to a previous version

yes just roll back 65-80 G worth of game... how long could that take?

There is no need to rollback on GoG if you prefer today's version of the game; Just don't upgrade. :)
I've already downloaded the 5707 version of stand-alone installer. So when Patch3 releases, I'll wait to upgrade, until I see what kind of stand-alone installer Patch3 get.
Complete, like 5707, or a incremental patch installer for version 5707 to "Patch3"? But never the less, I'll be able to choose what version of the game I'll play here at GoG.

Considering the enormous number of bugs that need fixing, feature implementation yet to be done, and general game/code changes, I have to say advising someone to roll back to a much buggier, more incomplete version of the EA game is simply not very good advice.

Why?

Because at some point the player will be forced to upgrade to the more complete, less buggy version of the EA--and lose his saves anyway. Doing it now cuts down the "pain" of restarts. Uh, that is kind of the way the EA releases are supposed to work. People who don't want to do that should not buy EA games, imo.

Now, reverting to an earlier save might be something I'd consider doing in a finished game or one that was close to being finished--in which the last patch did something to the game that I really didn't like. But being used to having to start the EA games over because the patch invalidates old save games is just par for the course for Larian EA games.
In my experiance with the latest release of an EA game, is that it needs a few hot-fixes to be able to play it.
That time (a week or two) I'll use on the old (todays) version game, and play-through. With mods I know work...
When the hot-fix-storm is calming, I'll be glad to update.

It is nice to be a GoG user :)

just to be clear, you are talking about stand-alone installers which are not covered under the official instructions and not guaranteed to even be a thing with this game

stand alone patches are made by Gog for people that can't or just don't want to use Galaxy... you get them when and if they come out mate

Short; Yes.
And it can take some time, but Gog-team hasn't failed me so fare :)
I'm not happy with my current save, anyway, so breaking it isn't going to be a problem for me. The speed of the download I usually get, on the other hand, means I'll fire off the update right before bed and check on its progress in the morning, once it's available.
