When BG3 launches it tries to save something to My Documents, presumably using it as a save folder. Obviously Windows 10's ransomware protection isn't too happy about that. It's easy enough to whitelist the .exe but that doesn't really solve the root problem, could the devs move BG3's default save folder to somewhere less critical perhaps?

your player profile and game saves are what you get sent to documents folder ... which fyi is the correct place for documents to be placed in Windows 10 so 'obviously' the issue is your system and not the code Larian includes

that said, its your system so if having game saves and character profiles in documents location really does cause a major issue you could just move them 'with the link' to wherever else
Where on your system would be less critical than My Documents? Buried somewhere in AppData?

Whitelisting is the right solution in this case. Ransomware is not going to dll inject into your BG3 exe just to get privileges to encrypt your documents folder; typical ransomware is generically-written, and the effort write in logic to find an obscure game process that *might* be installed, and *might* be whitelisted to My Documents, and then do DLL injection into it, is simply impractical for any automated malware.

It may be more reasonable for a targeted, interactive attack... but you're not important enough to waste that kind of resources on.

Just whitelist the BT3 exe.
