I saw that in the shop this game is labelled with Japanese audio and English text. But is there a way to be able to switch to the original Japanese text in order to practice? And if so, is there a way to switch back ?

I'm afraid no, this is a international version, Japanese version is for Japan only. And two months later, the original developer would stop all the support for its 18x games.
