why do the files "AssassinsCreed_Game.exe" and "Launch Assassin's Creed" trigger an UAC question about the program going to need adminstrative privileges while "AssassinsCreed_Dx9.exe" and "AssassinsCreed_Dx10.exe" could be run without UAC?

My guess is that the compatibility flag has been set, even though it shouldn't be needed. Right click on the shortcut, go to compatibility, remove the "Run as administrator" flag, and run it again. It seems that GOG sets the flag for all games lately, though not all of them need it.

seems your guess is right. After removing the "Run as administrator", the UAC popup no longer appears and the game starts.
