How do I eat food? According to the manual you right click on the food to "use" it but all that happens when I do that is the inventory screen collapses.

Thanks in advance...

You eat by pointing to the appropriate item and hitting F (Enter also works IIRC). The same goes for potions and other consumables.

No; double clicking an item is used to "combine" it with something else. This also includes food items because you can bake by combining the appropriate ingredients.
