I've downloaded them and extracted them and when it opens in word or notepad it is all in symbols and crap I cannot read. I'm new to this stuff so I'm sure it is simple but not for me. How can I read this stuff?

You need Adobe Reader (or an equivalent PDF reader) to properly open the file after it's unzipped (Windows Explorer should unzip it properly with no problems). You can get Adobe Reader here: http://get.adobe.com/reader/
