I have tried all the functions and keys described in the manual but they did not pause the game.
I found the Fn key (function key) on my keyboard plus the F12-Pause* key will pause and un-pause the game.

**I am not sure if the pause key is standard F12. So consider Fn plus whichever key is the pause auxillary on your keyboard.

within every Anno Escape gives you the menu, which pauses the game
