I'm firing up AoW1 and can't see any options to up the screen resolution -- according to PCGamingWiki the GOG version supports up to 1280x800. What am I missing?

The game comes with a separate configuration utility. It's named AoWSetup.exe and you find it in the game's installation folder (e.g. C:\GOG Games\Age of Wonders\)
Alternatively look in Window's start menu, there should be a shortcut named "Settings" within \GOG.com\Age of Wonders\
