I didn't see that there was a demo on GOG, it didn't seem to come up when I searched for the game, or linked to the game page, but it does exist, here's the link:

I've had great fun with it so far (about 3 hours in), and while lots of stuff is locked in the demo there's a lot of fun to be had, and you can really get a sense of whether it's your sort of thing.
