You can get Unfinished Business to work with the GOG version, if you don't mind having to edit the dosboxTR.conf file every time you want to switch between Tomb Raider 1 and Unfinished Business.
Download "Unfinished Business - 3DFX Edition" from tombraiderchronicles.com:
http://www.tombraiderchronicles.com/tr1/gold/demo.html
Extract the files into the "Tombraid" folder in the GOG install directory - C:\Program Files (x86)\GOG.com\Tomb Raider 1 2 3\Tomb Raider 1\TOMBRAID
Next, look for the file "DosboxTR.conf" in the main "Tomb Raider 1" folder, and open it in Notepad (you may want to just copy out a backup of this file to be safe so you can restore it easily if you need to).
Go right to the end of the text file, and look for the entry that looks like this:
mount C .
imgmount d ".\game.dat" -t iso -fs iso
c:
cd TOMBRAID
cls
tomb.exe
exit
Change the line "tomb.exe" to "tombub.exe" (without the quotation marks). Then run the game from the Tomb Raider 1 shortcut. When you want to change back to Tomb Raider 1 again, just change the line back to "tomb.exe".
DIsclaimer: Try this at your own risk, though it worked for me with no problems.
