Sure thing:
No. 5: Dungeon Keeper
- Your creatures are fighting amongst themselves! This soundbyte used to send me into a whirling panic. Still does, although as an adult I have become a much more efficient multi-tasker and thus can handle a little in-family tussle.
No. 4: Oddworld: Abe's Exoddus
- Manages to infuse the oh-so-necessary Quicksave function, as well as multi-mudokon control and commands. The perfect sequel: it fixes everything wrong with the first game, without sacrificing anything that was good.
No. 3: Rollercoaster Tycooon
- Special to me because my Dad was really happy to see me playing this. Up until RCT, he just assumed that all videogames were hyper-violent trash with no lasting value. After showing him my yearly earnings report, he never seemed to mind me spending hours playing this game :)
No. 2: Beyond Good & Evil
- I like BG&E because it features a prominent female lead with no misogynistic direction. Sadly, that's a remarkable and rare occurrence in the world of video games. It's a wonderful exercise in adventure gaming, and does everything it sets out to do extremely well.
No. 1: Fallout
- I just don't think that a game world gets any better than the post-apocalyptic playground of Fallout. It was the first game I ever played where I really got the sense that I could do whatever I wanted, however I wanted to do it. Everything you encounter is interesting, and could be your death if you aren't careful.

Thought I'd repost my list (with 1 change) and add some reasons like EC- did above.
In an order vaguely (but only vaguely) approximating favorite to even more favorite.
-Thief II: The Metal Age: The best stealth game bar none (in my opinion of course). Huge levels, lots of ways of tackling situations, fun gadgets (Scouting Orbs may be mostly useless, but they're cool!), great voice acting as usual, even if the story is a little weaker (I recall reading that for the second game they designed the levels and then wrote the story to fit). Sneaky fun times were had by all.
-Sid Meier's Alpha Centauri: Brilliant turn-based strategy game and the only one where "just one more turn" syndrome has significantly cut down on my sleep. I hope GOG gets the expansion soon.
-Psychonauts: Okay, so it can be a little frustrating, especially on the last level. But it's also a Tim Schafer game and that means that everything else (art direction, voice acting, level design, writing) is excellent. Also, the psychic powers add a bit of variety to the standard 3D platforming.
-The Longest Journey: Incredible adventure, despite occasional wonky puzzles (*cough* rubber duck *cough*) and long-windedness (I'm looking at you, Mr. Tobias). One of the few games where I didn't want to get to the end because of how attached I'd gotten to the characters. Dreamfall's very good as well so far, even if it isn't much of a game.
-Arcanum: Of Steamworks and Magick Obscura: Yes, it's flawed. It's unbalanced, the combat is a bit "eh" (not bad, just not up to Fallout or the other cRPGs), and the Black Mountain Mines were conceived by Satan on a particularly grumpy day. But the world is great, the voice-acting (even if not all followers are voiced) is great, the choices are great, the story and villain are great, and the character creation/development system is probably my favorite of any RPG. Any game where you can play an Escaped Mental Patient Half-ogre, firing electricity at people with a Tesla Gun while wearing a bullet-deflecting top hat, is something special.

1. Darkstone - freaking awesome game
2. Both Baldur's Gates
3. Icewind Dale
4. Stronghold
5. Gabriel Knight: The Beast Within and Stonekeep (sorry, they're both equally awesome)
I'm waiting for a client today and, if he pops up with the money he owes me, I promise I'll buy it tonight :)
