Maybe do it like the PC Gamer podcasts get. Have a set of people who are regulars, usually 2-3, then alternate some of the hosts, with no more than 5. That way most everyone is getting a turn, and also you get to see who can be favored.
I try and get into gaming podcasts or reviews whenever possible. When I was 17 G4TV offered me a job, but I couldn't afford to move out to CA to do it, and I've regretted it ever since.
As far as segments go, perhaps the following:
GOG news/releases/upcoming releases
General classic gaming
Modern consoles
Gaming in the news
Weclock's Adventures...errr...community discussion.
