I am especially looking for one where you can create a character from scratch, including the physical appearance of the character.
The Guild and Guild II, to start. I'll add more as I think of them.

edit: Divinity II and Two Worlds also.

Neverwinter Nights 1 and 2, to an extent (you can choose from various heads as well as the body type for each race).
Freedom Force vs The Third Reich is one that mostly comes to mind. Should be others, but I am not thinking of anymore currently.

Pretty much all of the Dungeons and Dragons games. Turn based RPGs tend to generally have that functionality from any I've seen anyway. No experience with other non-DnD games in the catalogue yet though.

As far as I remember from Baldur's Gate, IWD and Planescape, you couldn't change the appearance of your character in any nuanced way; the best option you had was to choose from different portraits (and not even that in Planescape, I think). I think OP is looking for games with more options in character creation, as far as appearance is concerned.

Yeah, I can't recall details of each game either. I know there is customization but don't recall the details. I can think of some non-GOG games that have customizations such as Battle For Middle Earth II Hero editor, Lord of the Rings The War in the North, Mafia II, The Godfather, some of the Grand Theft Auto games come to mind. None of them are on GOG though either.

GOG has a few, but not as many as I'd like. Some good suggestions in this thread, like Freedom Force; should check that out. I'll add some more as I think of them.

But yeah, I get where OP is coming from- I was hankering for a character-creation-from-scratch game as well lately, and started playing Guild II and Fallen Enchantress (not on GOG).

OP should play Skyrim though; dem modz *drool*

Yeah, too bad GOG doesn't have Skyrim, would be awesome. Skyrim does have a pretty good character generator
Baldur's Gate 2. You can pick the race of your choice, design the colors for your PC's outfit, pick a battle voice that you like, and a few other things I likely forgot.
Elemental Fallen Enchantress has quite extensive character development.
Darklands doesn't let you customise your appearance, as the game doesn't generally show the characters anyway, but it gives very extensive character creation options based on what you did for the earlier part of your life (or rather lives, as you have a party of 4 characters).

Isn't on GOG, though. Also, I wish the character models looked better in that game, so blocky.

Nice, thanks for mentioning!
