cmdr_flashheart: As far as I remember from Baldur's Gate, IWD and Planescape, you couldn't change the appearance of your character in any nuanced way; the best option you had was to choose from different portraits (and not even that in Planescape, I think). I think OP is looking for games with more options in character creation, as far as appearance is concerned.
skeletonbow: Yeah, I can't recall details of each game either. I know there is customization but don't recall the details. I can think of some non-GOG games that have customizations such as Battle For Middle Earth II Hero editor, Lord of the Rings The War in the North, Mafia II, The Godfather, some of the Grand Theft Auto games come to mind. None of them are on GOG though either.
GOG has a few, but not as many as I'd like. Some good suggestions in this thread, like Freedom Force; should check that out. I'll add some more as I think of them.
But yeah, I get where OP is coming from- I was hankering for a character-creation-from-scratch game as well lately, and started playing Guild II and Fallen Enchantress (not on GOG).
OP should play Skyrim though; dem modz *drool*
