I've been enjoying the Hollow Knight soundtrack.

(I could mention a few others I like, but I don't feel like it at the moment. Maybe later.)
Whenever I play a new game I either extract the music myself or find it elsewhere, then I listen to it occasionally and remember the game. I almost exclusively listen to video game music now, because I like instrumental music and it helps me relax. I have accumulated around 100 soundtracks and there are too many great ones to list. I think video game music is insanely underrated.
Wing Commander 1 and 2.

I can't get the music out of my head.

Lesser mentions:
Prince of Persia (the original 2D one)
Secret of Monkey Island.

All games that I played 20-30 years ago. I don't know why nothing since then has affected me in the same way.
I really enjoy the soundtrack for Deep Dungeon of Doom. Some of the tracks are just amazing in that game.
Hard question, some soundtracks I enjoy in-game since it fits even if I wouldn't listen to it (or find it good) outside the game. Fallout 1/2 would be an example of that.

I do enjoy reading books while listening to music from the Infinity Engine games though. Great background sound for fantasy but nothing that's intrusive.

Then there are cases like Jets 'n' Guns where I don't enjoy the game but I can listen to the soundtrack just for listening to the soundtrack. It's that good.

I love this thread. These are some examples of video game OSTS I always come back into.

Total Annihilation: Greatest OST ever by any standard ever :D!

DOOM (2016): Why the fuck not?

Dynasty Warriors 9: It has the best ost of these type of games up to date.

Dynasty Warriors 8: I always come back to this song on a regular basis and it also makes me want to play more DW games :P!

Eleminator: This soundtrack happens if you let prodogy Jaroen Tel make music. The game is also a remarkable one for the C64 as well.

Night in the Woods: It has some very good and very different musical themes throughout the game, but this one is the most memoriable songs from the tracklist.

Star Control 2: For such a ground breaking game, the OST is suprisingly unremarkable. This is the only track from the game I sometimes come back to.

Prophesy of Pendor: Greatest video game battle theme of all time.

Formula One: Greatest Amiga Intro of all time.

Lost Technology: Unknown game, probably the best OST of 2017.

Monkey Island: Please stand up for germanys national anthem.

The problem I have with that is that the soundtrack versions of the music are too short, and are written like they should eventually go somewhere, but don't have the time to develop.
No one mentioned civ4 yet? huh,

Also X3 reunion... special note to the Boron home sector (is it 'boron' i forget now?)

The games that come to my mind immediately are the Mechwarrior 2 Trilogy, Heavy Gear 1, Descent Freespace, Doom (the original), Final Fantasy 7, and Vampire the Masquerade: Redemption. For myself, the songs just worked well with the games. The only one I've listed to outside of the game are the ones from Mechwarrior.

Pherim: Assassin's Creed 2 (never played it)
Since you liked Jesper Kyd's work in Assassin's Creed II...

I love his ominous, droning work on Heroes & Generals -- especially the German theme.

Possibly a controversial opinion to have but Jesper Kyd's best work is also coincidentally the best game in the series and that's Hitman: Blood Money.

Also, I'd post more but I've posted in previous incarnations of this thread before. I've been a fan and collector of all types of soundtracks for decades and will continue to be until the day I pass on.
At the moment soundtrack from Stellaris.
