DOOM! You're right about the SoundBlaster, I remember listening to the Humongous Entertainment games' music for hours.
I always thought that the music in Doom was pretty iconic, but it never quite fit my tastes. I always preferred other games of the era that had a more laid back sound, such as Traffic Department 2192.
Now that I think about it, the Sega Genesis also had some standout soundtracks like Vectorman and Streets of Rage.

I can totally understand. RPGs tend to have pretty great music that matches the game's atmosphere.
