One of the great strengths of Morrowind is the incredible modding potential. Post the mods you like the most - essential, serious, silly, awesome or strange!
I'll update this list as recs come in and the post has space, prioritizing lists of mods and guides. There's too many great mods out there to list in 2 posts. #firstworldproblems
Essential / Vastly improves the Game
Graphics and Sound Overhaul, which merges 100s of graphics and sound mods into a coherent, easy to use installer.

Morrowind Crafting
Adds or expands hunting, sewing, mining, smithing, carpentry - if it involves crafting, Morrowind Crafting probably adds it. Used as a base mod for many other mods, which makes it important even if crafting is not your jam.

When you activate a plant, instead of opening like a container you will automatically try to harvest ingredients. Also the plant will change so you can see that it's been picked. Graphic Herbalism is a mod that makes collecting plant ingredients more sane. This mod updates the Morrowind Crafting plants to have the same behavior.

SOP offers a new Main Quest and storyline. The entire game is set in a new Kingdom. 5 new cities (Balmora sized and bigger), with several new towns and camps. Over 80+ hours reported game time. New monsters with new skins. New weapons and armor. A whole new look and feel. Over 100 new side and misc. quests, not to mention a huge main quest. A much more puzzle based game, similar to the old "Link to the Past, The Legend of Zelda".
