Because I already explained why there are two versions.

The thing I am not sure about is why people outside of Germany have the German version, but I guess it's easier to just provide it to everyone.
It's separate because it's not an add-on, DLC, or an extra. It is its own version. As others have mentioned, Nazi iconography is censored in Germany. I think the government makes an exception for educational media, which this is game (while enjoyable), clearly is not.

But if I change the language of say the new order I'll have the german version of that as well won't I? With all the censorship along with it?

It has been laxed a bit recently. You can get the uncensored version here in Germany as an option nowadays. By default you will still be offered the German censored version, but you can choose. It's different if you buy a physical copy since if it's a German version, it only has German language and censorship.

No. When a game is censored, it is typically done so to adapt to the culture it is being sold to. Being able to switch versions so easily would defeat the purpose of censoring the game in the first place. Lawmakers would find out about this pretty fast, and the game would eventually be banned. TNC has two completely different versions for this reason.

Yes, the German versions of The New Order, The Old Blood and The New Colossus are still censored. But like i said before, i don't know why they made an extra entry in our libraries for The New Colossus.

Edit: I've looked into my library and have a guess why they it this way: The Old Blood and The New Order have separate installers for the different languages but The New Colossus has a multilingual installer for the international version. So they made an extra entry because the German version is completely different and can't be included in the international installer.

The uncensored versions of the Wolfenstein games aren't banned or blocked in Germany anymore. (except RtCW)

I'm from Germany and own these games here on GOG. I can easily switch to the international versions and play them. But the international versions don't have German voiceover and subtitles.

Yeah, that link shows quite well that it is indeed a different product. If you have a physical copy bought from Germany, pretty much any WW2 game -- especially older ones, you do not have any possibility to play the uncensored version. It doesn't exist on the disk.

Zensierte Version - Censored version
Land: Deutschland - Country: Germany
Freigabe: Keine Jugendfreigabe - Age restriction: Not for minors (equivalent of R18+ in your country)

Unzensierte Version - Uncensored version

No you didn't didn't. I can download the the german version of other games are censored as well but new colosiss apparently can not be altered with a simple exe or something. I'm be asking support for further information.

Wait, what, why? I mean, of course you can ask, but I don't think you'll get an answer any time soon. They are busy with Cyberpunk 2077 returns at the moment. I have two actual issues open (not Cyberpunk 2077). The other one I solved myself and have asked that they close it a couple of months ago. They still haven't managed to do even that. I think it's a bit redundant to ask when you already have the information, but if you don't mind the wait, go for it.

Luckily my Cyberpunk is fine. Nothing game breaking. But millions of people are refunding it and it takes time to process all the refunds. So they are pretty busy at the moment. But hey, when you eventually get the response (like I said, it will probably take time), share it here.
