I can answer the second one. You have to go into the Maze with your Bishop. Set up Camp, and make sure the Bishop has the item you want to Identify. Pick the Bishop, and go into their Items menu (Press "E" once on default keyboard controls). Pick the item you want to Identify, and the option should be there.

In the new remake, to change classes, you go to the Training Grounds, then choose to edit the character. Note that this version will actually tell you what requirements you're missing if you don't qualify for the class, with the exception of changing to your current class (which is disallowed, but you don't get an error until after you select that option).

Just be aware that changing class lowers the character's level to 1 and the character's stats to the racial base stats (even when they're lower than the class requirements). (Technically, in rare cases this may actually be an increase, though I don't think it can happen with level (you'd have to find a way to cure LOST or trigger an integer overflow).) It also ages the character significantly (5-7 years or something like that).

To identify objects, you need to be in the dungeon, and the item must be in the Bishop's inventory. Just be aware that accidentally touching a cursed item will curse the character. (Unlike in Wizardry 5, touching this item won't make you Afraid. The Afraid condition *does* exist in the original game, but it's only partially implemented and can't be seen except via a glitch.)
